Feijão azuki

O feijão azuki, originário do Japão, é uma leguminosa selvagem, pequena e vermelha. A sua introdução na Europa deu-se após o século XX, depois de ter sido levado pelos emigrantes japoneses para o Brasil.

 

É um alimento de grande riqueza nutricional, pois é rico em proteínas, fósforo, cálcio, ferro, potássio, zinco, fibras solúveis e vitaminas do complexo B.

 

 

 

 

 

 

 

Para além de propriedades diuréticas, este feijão fermenta menos do que os outros. Auxilia na formação óssea, fortifica e regenera rins cansados, sendo indicado para disfunções renais, hipertensão e diabetes.

 

Os japoneses utilizam-no na preparação de doces com sabor suave.

 

Na alimentação vegetariana é o ingrediente principal de feijoadas ou chili, por ser leve e saudável. Também é usado na preparação de sopas e saladas.

 

O consumo de arroz com feijão azuki fornece ao organismo uma combinação nutricional completa.

 

Antes de qualquer preparação, este feijão deve ser deixado de molho durante 10 a 12 horas.

 

Deve cozinhar-se, preferencialmente na panela de pressão, durante 30 minutos, sem sal. O sal deve ser adicionado depois da cozedura e de se deixar a água evaporar, com a tampa destapada e a chama moderada.

 

Com este alimento também se pode preparar uma infusão particularmente indicada para fortalecer os rins, a bexiga e os órgãos reprodutores; ajudando ainda a lidar com casos de obstipação e a eliminar o excesso de produtos animais.

 

Para preparar esta bebida deve colocar-se uma chávena de azuki num tacho, juntamente com uma tira de alga kombu (opcional) e adicionar quatro chávenas de água. Depois de levantar fervura, deve baixar-se a chama para o mínimo e deixar o líquido borbulhar durante cerca de meia hora.

 

No final, coa-se e bebe-se quente.

 

Se, após ter coado os feijões, se adicionar meia chávena de rábano, nabo ou rabanete ralados, obtém-se uma variante desta infusão indicada para dissolver cálculos renais.

 

Actualmente, o feijão azuki é um produto relativamente fácil de encontrar em lojas de produtos naturais e até em alguns hipermercados.
